the window on the right hand side of the screen appears but no text is located inside the boxes. all of the buttons are there just no text so i can't see what im selecting or doing.

No idea then.
Try uploading your log (~/Library/Logs/Unity/Player.log) somewhere.

the only other thing that is missing is the where the EVA button is next to the feed of the kerbal. the button is there but there is also no text in that either. so could it be KSP fault rather than a mechjeb fault

Do you by chance play in fullscreen and tab out during loading at
startup? That's known to cause problems with the fonts because
Squad/Unity/whatever.
Try not tabbing out or windowmode and see if that changes anything.

If available (I got no idea about macs) try starting ksp with
"-popupwindow -force-opengl" as commandline parameters. That's like
steam's borderless fullscreen windowmode which solved the problem for me.
