When using the /plot sign setpos, the sign always faces the same direction, no matter what direction you were facing when you placed it.

Is there any way we could get an option to change the direction the sign is facing?

Well, the sign is supposed to face at you, so you can move the sign by moving yourself. However, that was bugged. Just fixed it and released 2.3.2, which contains your fix.
