but the biggest problem I have is trying to spawn the shopkeeper in with the villager eggs.  it doesn't work.
I tried clicking the sky it doesn't change no settings and if I click on the ground or on a chest it always find regular villagers.

Make sure that you are not in creative mode. The villager egg acts like a normal villager egg for creative mode players.
