What version of spigot are you running your server on?
Are you by chance running some modded spigot server / some spigot derivative, instead of the official spigot server itself?
Or maybe: Are you running with some sort of 'protocol hack' for cross compatibility between MC 1.7 and 1.8?

Hm, I have tried it with (nearly) the same server version (only 1 commit newer, should not affect anything related to shopkeepers), and with client version 1.8, and the same shop setup and everything works fine on my test server..
The debug message you see: I only get it if there is no item in the trading result slot currently.
So right now I cannot reproduce the issue :(
Maybe you could setup a quick testing server as well without any other plugins which might cause interference of some sort.
And also make sure that you are not using any client mods as well during testing, just in case.
