Would it be possible to add in the ability to interact with the environment while vanished? This could be done under a permissions node or simply an option in the config. Thank you.

By default you can interact with the environment while vanished. If you are vanishing and finding you can't then you've explicitly granted yourself the permission nodes for enabling interact blocking. Check over your permission nodes and read over the permission node documentation.
