Could we possibly get the ability to choose what animals are tamable via config, and maybe the ability to switch between the modded sit, wander and follow ability and vanilla's basic sit and follow?

Probably it's a very difficult thing... Tamable mobs are inheriting TamableAnimal class which has internally defined many behaviors after getting tamed. For mobs not inheriting TamableAnimal class, implementing taming may means to remake it..
