I am currently trying to extend this awesome mod with an add-on (of course, the modpack I am working with contains the mod and all the appropriate credits, we didn't copy the code but rather use it as a library to extend). I succeded in having a horse ride the ChestCart Vehicle, by extending the FiringVarsHelper and treating the case a player riding a horse right clicks on the cart. The hose attaches to the cart, but is unable to move it, to give it any motion. I believe the reason lies in the MovingHelper, but I cannot find a way to implement an extension that provides movement, since I don't find a single line where the movement is limited to a player. I hope you don't get mad if I am working on add-ons, it is just that users expressed their liking to your mod and suggested the possibility of long travels with ChestCarts and horses.
