tried using spongeneo v21.1.35-12.0.0 alongside modpack Medieval Minecraft 5 v12, server launch throws an issue when trying to load the mixins for apoth attributes.

I don't see any such errors in that log. You might be better to triage with Sponge; if they determine the issue is caused by one of my mixins they can bring it back here.
