I hate to be that guy, but....
is there anything I could do to help speed up getting a 1.21.8 version up and running?

Is it similar enough to the 1.21.5 version that just updating the version code to cover 1.21.8 be fine?
I'm not the greatest coder, but I can learn quickly with pointers

There is no plans right now, due to the rapid releases of new Minecraft versions.

Might revisit once 1.21.9 is out, pre-releases is already out.
