I had this same issue. The most recent version of Geckolib removed the AnimationFactory.getOrCreateAnimationData. Quick fix is to install a slightly less recent version. For 1.16.5 I found Geckolib 3.0.96 works.

Only up to .96 will be supported for 1.16. The latest update will alert users if they download an invalid version. You will need to downgrade your version.
