Our server sometimes randomly crashes, I believe it has something to do with the Ars Nouveau Whirlisprig entity. See the attached log file at line 40.

That crash is from the minecraft server watchdog, it kills servers when a tick takes too long. You can increase or disable the watchdog in server.properties. That crash does not point to any mod in particular, you should run a spark profile on your server if TPS is low.
