It would be nice to have a covered wagon.
2 seats in front (one to steer the horse)
and a goods + passenger area in the back of the wagon

I think the implementation will be too difficult because the player is not currently sitting on the horse.
I don't know what possibilities there are. Maybe with a fake player?
