No setting, but command to open GUI - maybe a Keybind, that can be pressed to open it

No. This is out of scope for baritone and it's why the API exists, so stuff like Impact and KAMI Blue can make their own GUI for it.

Baritone is entirely command based and won't get a GUI, because that's not what baritone is for
