i'm using 1.21.3 baritone 1.11.1 and when i want to mine for like iron or diamonds it excludes some blocks for getting mined altough there is not lava etc ... near it

It's fine. Nobody expects you to know all 240 settings.

You mean "exclude" in the sense that it blacklists them or are you just running into the scan limit and need to increase mineMaxOreLocationsCount?
