Your modrinth versions are way more updated than curseforge for 1.17.1 and I cannot find a change log anywhere, nor a repo with commits.,

The modrinth versions are for the weekly prereleases; there's no 1.17.1 on modrinth that's newer than the curseforge version. The commits are in the fabric_1_18 branch, but they're quite boring.
