All tables act the same, I understand this is by design

Solution(s)

A config that allows the enabling of a "strict mode" which means only a glassblowing station can edit glass blocks, only a carpenter's table can edit wood blocks, etc

Describe alternatives you've considered

I first thought that maybe I was glitched and Polymorph was allowing all the tables to operate the same way. I kind of expected it to be a requirement than you make the appropriate table
