In the most recent version of the mod for 1.20.1, the pottery table does not exist. There is no way to add different trim patterns to pots, only the default trim.

I am running clayworks-1.20.1-3.0.4.jar and blueprint-1.20.1-7.1.3.jar on Minecraft 1.20.1 with Neoforge 47.1.106.

Correct, it is only for later versions.
