There are a lot of other mods in here, could you try a binary search with them? i can't replicate this with just the mod, Cobblemon, my other Cobblemon sidemod, and their dependencies.

My immediate guess could be some other mods adding Trinket slots, but i'm unsure.

I decided to test this in a survival game (same modlist as above) and in a fresh instance with just cobblemon, boxlink, sophisticated backpacks, and trinkets and it worked just fine. Seems like it may be an issue from a previously installed mod that messed up the player data in the creative test world
