I was curious if Colytra respected all enchantments on Elytras besides Mending, i've seen that work. I have a mod that allows Unbreaking enchants beyond III and was curious if they would be working as intended because my tests seem to be the Elytra drains as if no Unbreaking enchantment is present while it is connected to my chestplate

Edit: I should probably mention I haven't used Elytras much, so I don't really know how fast durability drain is normal.

It doesn't respect all enchantments, particularly modded enchantments will need some integration code somewhere in order to work properly. However, Unbreaking should work as normal since Colytra processes the elytra damage through the vanilla methods.
