When I change the config file, it turns my version of the config into a backup then resets the actual file to the default.

After doing some debugging, I realised it only happens when I change the attack speed or reach overrides in the config. Thanks for responding!

The 1.21 version has in-game config screens, you can change the values there to be more safe from accidentally breaking the file.
