When I place some blocks the texture is plane

I had the same problem, its an optifine problem. Try downgrading your optifine version to 1.16.4 HD U G5. That fixed it for me

Correction: Using AA and AF does still cause the issue sadly.
As of today, the preview version of OptiFine "preview_OptiFine_1.16.5_HD_U_G8_pre11" and Forge 36.1.0 for 1.16.5 shows no texture errors so far.

Disabling anisotropic filtering and antialiasing in Optifine's quality settings should fix the issue.
