To verify: Using Create version 0.3.1c, give yourself a bucket of honey and a bucket of chocolate and enter the nether in survival mode. Try to place the honey or chocolate down. They will not be placed and the buckets will empty.
This seems like an oversight to me because liquid forms of these should have more heat than their solid forms.

Due to the way forge/minecraft handles fluids, both honey and chocolate are tagged as water, which gives them the properties that allow you to swim in them, boat on them, etc, but it has some side effects such as not being placeable in the nether by normal means and water particles appearing.
