In the server config, you can set the maximum number of blocks that can be included in a contraption. If you build a very large minecart_contraption, this also works. But as soon as you collect them with the wrench you will be kicked off the server with the following error:

Please increase the maximum byte length for nbt tags, so that you can collect big minecart-contraptions.

That's not actually possible, the NBT limit is something from vanilla mc's code, you just don't encounter it regularly for obvious reasons.
