Whenever I use dolomite, gabbro or weathered limestone I can't seem to craft stone tools.

Stone tools are only craftable with items that have the #minecraft:stone_tool_materials tag, which only includes cobblestone and blackstone; in 1.16.5 Vanilla. I checked the files just to be sure to give a correct answer.

If you have the Quark mod, it will allow you to craft stone tools with any #forge:stone, #forge:cobblestone and even flint. That should make the recipes work with the Create stone types.
