The water and lava chickens no longer produce anything, the eggs don't appear in creative or in JEI. Did the mod break, or could it be an issue with another mod?

The issue with the fluid chickens is known (Issue #48). My best guess currently is that something broke in updating the mod to be 1.19-compatible.
