Description of your suggestion.

The Vidalia "Sweet" Onion Concept

As the agricultural staple of my hometown, the Vidalia Sweet Onion proved to be one of the most profitable & rarest commodities for our community, due to their distinct flavor & growing process. This particular onion boosted our economic scale exponentially, turning a small crossing neighborhood into a proper town.
Due to the rarity & unique characteristics I believe it could translate well into Croptopia.

Trading

A new Farming Villager trade, which will pay for the Vidalia Onion at a considerably high rate in Emeralds.
This max trade rate can be reduced to avoid any exploitation. This would also be accurate to the rarity of the Onion IRL

Spawning

Another parallel to it's IRL rarity could be that it's only found within the Flower Forest. Another measure to prevent trading exploitation as well. If this proves to be too restrictive, it could be changed depending on what is viable.

Growing

Vidalia Onions will be ready to harvest roughly around about 6 - 9 weeks in real life, unlike the typical Onion which is harvest at approximately 14 weeks.
Ingame, this could be reflected by applying a slightly increased growth speed, compared to the Croptopia Onion.

Harvesting

A typical Vidalia Onion will grow in singular rows IRL.
This could be represented visually as a row of stalks, 3 per block, in the center of the Farmland block, having the stalks follow the direction of the dirt lines. This would distinguish it from the other Onion Crops as well.
You could harvest 3 per block. (could be reduced to 2 if this proves to be exploitable in trading)

Item Name

"Vidalia Onion Seeds" / "Vidalia Onion"
This could prove to be unattractive as a name choice, so another option could be
"Sweet Onion Seeds" / "Sweet Onion"
The term "Sweet Onion" is directly associated with it, so this would be practically the same name.
