Can't override unbound keys

Describe the Issue
Mod version is fabric-1.21.8-21.8.3.
I tried to override vanilla's Toggle Cinematic Camera key (key_key.smoothCamera) by calling /defaultoptions saveKeys, deleting options.txt and restarting the game. It didn't work.
