Is there a way to change the recipe that draconic evolution made for End Crystals or disable it so it goes back to the vanilla form. Thank you

I believe the recipe actually has not changed yet in DE3 (for MC 1.16.5). However, if you don't like it, you can always make a quick CraftTweaker recipe. One simple shaped vanilla crafting table recipe wouldn't be hard to make at all, especially since they have a GUI you can use.

Use /ctgui craftingtable, then literally make the recipe using the crafting table. After you save it, restart Minecraft and it will apply.
