Enabling chest spawning of eggs in a world does not appear to add them to loot tables. As of now, JEI only seems to pick up the forest dragon egg as an asset of the mod.

Updating this. After doing a search appears to be a recent JEI issue. Eggs are still spawning even if its not detected by JEI

I can't help with the issue, but I can't for the life of me find the loot tables thing. It's my first time using a mod and java edition in general and I'm super lost. I checked the folder like it says but that file wasn't in there. How do I turn it on? It looks like you did from Java itself so now I'm even more confused cause that looks way easier but idk where it is.

So thats from using the configured mod. If you want to do it normally, create a new world, go to your minecraft saves folder followed by that world folder. Find the serverconfig folder and dragon mounts config for the world will be there.
You can enabling spawning from there.

As for the config issue, I can't recreate it.

HOWEVER, I am aware of the issue of the breed eggs, spawn eggs, etc. not appearing correctly in the creative menu (such as search)
This is due to the dynamic nature of the dragon breeds, and I do plan on working on a fix for this.
