Unable to change config, they get resetted the moment the server restarts when I want to make changes to the config.

What does this mean? You mean you change the config, restart the server and the old values are back?

Could you send latest.log and debug.log? They might contain some info

I managed to get it fixed with customer support from the hosting party. There was apparently a corrupted file which prevented the server to read configuration files and over written the ones I changed. Sorry for the inconvenience.

To answer your questions, I used FTP to edit the files directly when the server was shut down. I even used the in-game settings and saved those settings and restarted the server.
