This has happened to a good chunk of our modpack players. If it is a mod incompatible, please let me know which ones I need to adjust or remove, that would be very much appreciated.

That's a mod conflict, but there is no hint in the crash what other mod might be causing it.
Therefore I can only recommend testing subsets of your mods until you find which one is conflicting.
One possible candidate would be GeckoLib, try updating / downgrading that first, there was a version which broke Easy Anvils due to a bad Mixin on their end.
