Villagers suddenly increase prices, and prices differ when they're out or in an auto-trader

Ok so I've already done a bit of research and asking around regarding this issue, but haven't found an answer that solves the issue. Here goes.
I set up a Villager auto-trading system a couple of weeks ago, trading carrots for emeralds. Everything went fine until a couple of days ago when suddenly their prices increased dramatically, and I quickly ran out of carrots.
I asked around what the issue could be, and I got the answer that the villagers need some downtime, and when they don't get that, they increase their prices without the opportunity to decrease them again. I was told this was a special feature of the mod.
So I build a daylight sensor redstone contraption to cut of their supply of carrots during the night. I'm not sure if this works because of the internal buffer of the auto-trader but who knows.
It doesn't seem to work after an hour or so of playtime. However, when I pick the villagers out of the auto-trader, and put them down, the prices are way down, but when I put them back in, they go up again.
So I'm not sure what's going on here. The villagers have all been cured using the Converter btw. Down to 1 carrot > 1 emerald.
Right now I'm using version 1.16.5-1.0.13, but I have the same issue with an earlier version that came with the modpack (Vault Hunters). Forge version 36.2.23
