Hey! I optimized the block model for you.
There are two versions here.
One is optimization only ( 7 cube each block ) , one is low poly block model ( 3 cube each block ) .

Sorry ,I make a wrong cullface ,but it easy to fix。
and the gap isn't model bug. It's a render bug, models are accurate ( you can read my file ). I don't know how to fix it.
Blockbench's model need optimization you self. It didn't make cullface. Try to read my file and write better.

I think the gap is caused by the way you are doing the model. This also was the reason why I didn't use the technique you used.
I will not update the model if it stays like this.
Of course, I trade details for FPS. Can’t use my model if you need details. No gaps need + 8 cube.
I think it's unnecessary to shave off a few cubes. The villager blocks are special renderers like chests, shulkerboxes, etc.
They will decrease performance either way.
