I tend to play Minecraft with a small UI and I have a rather large screen, this leaves a massive empty space in the recipe window that is just dead space in my mind, would it be possible to add a way to choose how many recipe blocks are displayed to prevent this on larger screens and smaller UIs? As an understand of what I mean;

You can increase the "Vertical Margin" config option to give yourself more space on the top and bottom of the screen. More configurability in general would be desirable though.
