A Leech Trident will still give its melee benefits ( healing 2 hp / 1 heart when hitting an entity) when used in the offhand, regardless of what item is currently in the main hand. This extends to projectile weapons like tridents, bows, crossbows, etc, with arrows, tridents, and torches able to the entity who used them healing upon hitting an entity.
