When I wanted to use the normal Enchanting Infuser, I could only enchant a tool once and after that the selection/text vanished. It only disappeared in the normal Enchanting Infuser. The advanced Enchanting Infuser worked like usual. If logs needed, let me know!

That is intentional, only the advanced infuser can edit already enchanted items. The normal infuser is just like a vanilla enchanting table with the difference of being able to select your enchantments.
You can use a grindstone to disenchant your tool, then it can be used again in the normal infuser.
