Pretty much, the Fallen Mount texture is screwed up when the Gray's Mob Overhaul resource pack is enabled. This looks to be an issue with the Zombie Horse model from Gray's Mob Overhaul going based off what the screwed up texture looks like. I've attached the screenshots of what I mean below. The first one is with Gray's Mob Overhaul enabled, and the second one is with Gray's Mob Overhaul disabled. I'm not sure if this is an issue you can fix considering it's with a resource pack, but you told me to report it here.
