[Bug - models] Minecart model incorrectly shows for all minecart entities in 2.4.0+

Describe the bug
In versions prior to 2.4.0, the minecart model would only show for the base minecart entity and leave other minecart entities unchanged (2.2.6)

In 2.4.0+, the model is applied to all minecart entities. (the minecart chest model is also broken, this may be related to #232) (2.4.0, 2.4.1)
