What happened?

Yo, I had the same issue, found the responsible : it was "Epic Fight Battle Styles", it seems to have a server side issue making the player not able to attack / only do jump attack. Remove it and every thing will work again !

If you have sinytra connector or you are running this on a dedicated server, you should check your modlist because this is most likely a mismatched mod list problem or just sinytra being weird (which i would recommend removing it)

I don't have sinytra, but I'll check the mod list.

Please also make sure you're not in mining mode, this was an issue for me until I made sure that I had entered battle mode,
I can confirm I have a modpack with over 250 mods without this issue.
