When I build the assembler matrix multiblock structure, whether it be a 7x7 or even a 5x7, it wont connect to any cable to the ME controller to recieve power and come online. The structure is built correctly but wont connect to my ME system

Because you build it in the wrong way. The edges should be Assembler Matrix Frame and what you are using is the Extended Machine Frame
