Clay golems should shoot clay balls, terracotta golems should shoot bricks (which produces a little more knockback and damage because it's a heavier and more solid projectile), and obsidian golems should shoot obsidian projectiles, which would do more knockback than bricks (heavier) but the same damage (let's not make it too op).
