If you use a shovel on grass or Dirt DoubleSlabs or Slabs on upper position to paths they move/shrink to a single slab on the bottom position.

Thank you for bringing this to my attention, it seems the same thing happens with stairs as well, they just reset to their default orientation. I'll look into it when I have the time.
