Newest update compiled on too new of a Java version

Getting this crash on my server when trying to run the newest update of Greek Fantasy:

Having an issue with New version 16.5.2 - couldnt luanch - reveting to lower version has fixed issue

Unfortunately, not. Most of the mods (as well as vanilla MC) are still using Java 8. only 1.17+ vanilla runs on Java 16 natively.
When trying to using Java 16 on the server, multiple other mods crash. I don't think most mod authors will be updating their 1.16.5 mods to 16 as they're saving it for 1.17.
