So I'm using a dark GUI resourcepack, and changed GregTech's UI color too for consistency, then:

Yea the machine name is now barely visible.

Maybe I'm blinded but I failed to find a config option to change the font color on UIs, but only for multiblock preview pages on JEI.

Your Solution

An option to change UI font color, or make the color self-adaptive.

#2053 will allow just that. However it will take some time until it gets merged.
