Villager will not become Gun Smith
No matter how hard I try, villagers just will not become interested in the gun tables. They are immediately interested in anything else, even when they are put in a box and thousands of blocks away from anything else, they still refuse to become a gunsmith

Steps to reproduce the behavior:

1. Place Gun Table
2. Spawn villager
3. Wait
4. Attempt with another profession
5. See error

I unfortunately was unable to find a fix for it :( waiting for a bug fix hopefully

I'm experiencing this exact bug as well

Resolved in 3.0.5
