Every time you start pressing W on a horse and then stop this animation plays, in Vanilla it should NOT
Setting horse_model_y_offset to 0 fixes this issue.
I'm not sure I can fix it properly, as Fresh Animations seem to override these settings (head_offset as well) and causes them to not have any effect.
Setting this setting to 0 when Fresh Animations is installed is also tricky, as it's not a mod but a resourcepack, and detecting it is probably harder.
Interesting that I haven't seen this bug on 1.21.1, I have Fresh Animations in my modpack and it works nicely.
