Hi there, I just wanted to chime in on this issue and say that I have found that loading the resource pack Stay True by haimcyfly (haven't tested with others but may work), and the compatibility addon by wedge1453, above Immersive Weathering in the resource pack settings seems to fix the missing texture issues. I hope this can be of some help.
