Have the shown item cycle through the possible random enchantments. Additionally, Villager Trade Tables have multiple choice trades but only the last trade from an array is shown in JEI.

Some other ideas

• clicking the arrow in the villager's trade GUI opens JEI showing only the trades of that career
• clicking the career title in JEI shows only trades for that career
• clicking the JEI tab shows trades from all careers
• less text on the GUI, something like this maybe:

I meant the tab at the very top as a show all. But I think that is how it already works anyway.
