Right now it seems it went from 1.21.1 to 1.21.10, could you kindly release a 1.21.8 version for Fabric?

The recipe sync in Fabric was implemented here: FabricMC/fabric#4926
It is only available in 1.21.10.
New versions are coming out quickly and it looks like things will continue to progress that direction. Currently, I am not sure people can reasonably support all of the intermediate versions between 1.21.1 and the latest one.

While new MC versions are coming out quickly, large servers don't typically update that fast due to server addons not coming out as fast as Mojang is releasing MC versions . The server I play on just went went from 1.21.1 to 1.21.8 over the weekend and will be at 1.21.8 for quite some time, so not having the intermediate versions hurts your user base. It's great that you are doing the newest versions, but the intermediate versions really shouldn't be skipped.
