So I did some digging and saw that you guys openly support datapacks and even give some tips on how to do it. So my question is what is the limitations. Say I want to add new classes or spells and such. Is it possible to do with a datapack?

Yes you can add new spells and classes, those are the most complicated types of datapacks though. Some easier ones are runewords, unique items etc.
